Behind the scenes

A day in the life at the microfarm

Every clamshell you get from Casa Verde starts two weeks before delivery — seed, soak, tray, rack, harvest. Our micro-farm in Vaudreuil-Dorion runs on precision rather than scale, which is why your basil hits the pass exactly as ordered, on the day you said you needed it.

Microgreens grown for Montreal kitchens

Casa Verde is a small-batch microgreen farm in Vaudreuil-Dorion, at the western edge of the Montreal metro. We grow exclusively for the restaurant trade — chefs, caterers, culinary schools, and private dining operators across Montreal and the surrounding island. Every tray is harvested to order the day before delivery, so what lands on your prep bench is the freshest microgreen available in the region.

Our catalogue covers three distinct ranges: more than fifty single-variety microgreens — from bronze fennel and red shiso to Thai basil and alaskan nasturtium — signature specialty blends built around specific cuisines (Taqueria Mix for Mexican kitchens, Tokyo Mix for Japanese, Taverna Mix for Mediterranean), and seasonal edible flowers harvested between May and September. The Chef Pack is a curated sampler of seven varieties, designed for kitchens exploring microgreens for the first time or rotating through new garnishes on a tasting menu.

We deliver free to restaurants inside our Montreal service zone, with standing weekly orders for established accounts and one-off orders for private events. Wholesale pricing is available on request — most varieties ship in 50g, 100g, and bulk formats depending on the variety and your use case.

If you're new to microgreens: these are the early-growth stage of edible plants, harvested 7 to 21 days after germination, concentrated in flavor, color, and texture. They're distinct from sprouts (which are germinated in water and eaten whole, roots included) — microgreens are grown in soil, cut above the root line, and used as finishing ingredients rather than bulk produce. For a Montreal kitchen, they're the fastest way to add color, aroma, and seasonal variation to a plate.

Frequently asked questions

What are microgreens?

Microgreens are the early-growth stage of edible plants, harvested 7 to 21 days after germination when the first true leaves appear. They're grown in soil, cut above the root line, and used as finishing ingredients on plates — concentrated in flavor and nutrients compared to the mature plant. Common culinary uses include garnish, salad components, sandwich fillings, and plating accents.

Do you deliver across Montreal?

Yes. We deliver to restaurants across the Island of Montreal and the surrounding metro from our farm in Vaudreuil-Dorion. Standing weekly orders for established accounts include free delivery; one-off and event orders are handled case by case. Contact us for delivery schedules and minimums in your specific area.

How are microgreens different from sprouts?

Sprouts are germinated in water and eaten whole — seed, root, and shoot together — usually within a few days of germination. Microgreens are grown in soil (or a soil-like substrate) for one to three weeks, develop true leaves, and are cut at the stem above the root line. Because microgreens are grown in soil and harvested past the sprout stage, they have a stronger, more developed flavor profile and a different food-safety profile than sprouts.

Is there a wholesale minimum for restaurants?

For standing weekly accounts, there is no strict minimum — we'll work with the volume your kitchen actually uses. For one-off orders and event catering, minimums vary by variety, especially for seasonal edible flowers. Reach out through the contact form with your expected weekly volume and we'll send back a tailored wholesale price list.

How long do microgreens last in the fridge?

Stored unopened in their clamshell at 2–4°C, most Casa Verde microgreens hold for 7 to 10 days from harvest. More delicate varieties (basil family, amaranth, edible flowers) skew toward the lower end; hardier varieties (radish, pea, sunflower, brassica) toward the upper end. Because we harvest the day before delivery, you're starting that window at day one — not day three or four like produce that has moved through a distributor.
